Lightly Curried Broccoli, Peppers and Carrots

How to SASS-IFY:
• Add some red chili paste to the liquids. Very spicy goes well with the mellowing coconut milk.• Or, sauté some chili peppers with other vegetables.

*Cupboard-ready Substitute:
• Use dehydrated milk powder – just add water and a dab of honey for sweetness.

Serves 4 – 6

2 cups baby carrots

1 each yellow and red bell peppers, stems and seeds removed

1 large red onion, peeled

1 tbsp olive oil

1 tbsp granulated garlic

fresh ground black pepper, to taste

14 oz can light coconut milk*

1 tbsp teriyaki baste

1 tbsp reduced sodium soy sauce or liquid aminos

2 tsp yellow curry powder

6 cups fresh broccoli florets

1 tbsp cornstarch

¼ cup sliced unsalted almonds

  1. Quarter the carrots lengthwise. Soften slightly in microwave (add 1 tbsp of water, cover and microwave on high for 1 minute max).
  2. Cut the peppers and onion into large but bite-sized pieces, about 1 ½ inch squares.
  3. Sauté peppers, onion and softened carrots in olive oil, garlic and black pepper for 10 – 15 minutes until lightly browned.
  4. Add remaining ingredients except cornstarch and almonds; mix well, bringing to a boil.
  5. Reduce heat and simmer, covered, for 10 – 15 minutes, stirring occasionally.
  6. Remove cover and extract approximately 1 cup of liquid into a glass jar that has a lid. Let liquid cool in jar for 2 minutes, then add cornstarch. With lid securely on jar, shake well to mix cornstarch into liquid. Remove lid slowly and carefully as liquid is still somewhat hot. Pour mixture back into pan and mix well. Increase heat to high, bringing liquid to a boil and stirring often for 2 minutes.
  7. Remove pan from heat, and let cool slightly before serving to allow sauce to thicken.
  8. Transfer to serving dish and sprinkle with almonds.

SERVING SUGGESTION: Over Teriyaki Ginger Rice or quinoa, accompanied by Blazin’ Glazed Tofu

LEFTOVER SUGGESTION: Makes a delicious topping for a baked sweet potato, or serve over your favorite pasta.
